I’ve always thought it would be nice to try tea sandwiches. Unfortunately, my IBS doesn’t allow me any bread. So, here is something I usually try:
My favorite “cucumber sandwich” is tuna. I make a tuna salad (usually with Greek yogurt or sour cream, because I’m not a fan of mayo), cut up some tomatoes and cucumbers and stack them up! When I make mine, I put a slice of tomato on the slice of cucumber and put the salad on top. I eat mine like an “open face sandwich”, but you can, of course, put another cucumber slice on top.
The possibilities for this sandwich are endless! Turkey and Swiss with Avocado, BLT’s, chicken salad…you get the picture!
