Umm…whoa! This is definitely a great breakfast! While I couldn’t eat the potatoes and am not used to having beans for breakfast, this was an amazing meal! The avocados are grilled and then the eggs were nice and fluffy. The caramelization in the avocados was a nice complement to that signature egg taste! And the chorizo was a nice add in the texture, it really brought a nice sultry and meaty note to it all. I have to say, this was an amazing meal, even without the potatoes!
This didn’t irritate my stomach at all, so if you have IBS this might be a good option for you! There wasn’t a lot of cheese, so IBS-C sufferers should still be fine. Also, the avocados and eggs should be fairly good for you (although some can constipate from eggs). If you are neaar one, I would definitely try it!
