Okra

I LOVE OKRA!! I’m not usually albe to have it, since most people tend to bread it. However, I can make it at home and recently found an easier way to go about it!

 

I got these bags of frozen Okra from Wal-Mart and decided to make some, myself. I enveloped them in foil and stuck them in the oven for about forty five minutes. But, somehow, that wasn’t enough time. So, being the piggy I am, I ate the cooked pieces and threw the rest in the microwave for ten minutes. Then, they were ready to eat!

The next time, I decided to just put them in the microwave. I put paper towels on a paper plate and then put the okra on top (they were still frozen). I put it in the microwave for ten minutes. They were a little dry, which I like. So, if you prefer them a little less so; I would say try seven minutes. Some people have problems with the liquid Okra secretes. If you think it slimy, you won’t like this method any better. In this instance, you might want to try boiling it and adding salt to the water (or if you want to try the microwave option, maybe add a thin layer of salt to the paper towels).

Okra isn’t usually a problem for IBS tummies, but some vegetables can be hard for those with IBS-D. If this is the case, be cautious.
