I. Love. Elotes. I know, I love a lot of foods. But, this stuff seriously gets me, every time! I see all kinds of ideas for them and thought about making them. But, making them fresh is such a process and sometimes I get really hungry and need them NOW! I tried this and thought it came out pretty well, so I wanted to share it with the world!! Not only was it easy, it was cheap!
These are all the ingredients I used! Cream cheese (I only used half a brick or 4 oz, but you can probably use 2 oz.), jalapenos and frozen corn (I got a 12 oz bag). You can get all of these ingredients from Walmart, but most places have them. If you shop somewhere else, I’m sure it will work just as well!
I put the cream cheese in a bowl, first. I LOVE cheese, so I put in 4 oz, but if you want it a little less creamy and cheesy (or just don’t have that much cream cheese lying around) 2 oz will do fine. Then, I put the jalapenos on top (I didn’t have a lot on hand, or I would have used more than is shown and if you have them diced or dice them yourself it will help). And then the frozen corn. Don’t thaw it out. Just break it up and pile it on top of everything, trust me! I like to pour jalapeno juice on top. Somewhere around five tablespoons is what I use, but you can always use more.
I put it in the microwave for ten minutes and then took it out to stir it. When the corn thaws, it will leave some water in the bowl and the jalapeno juice with it makes a great mixture for the cream cheese, to keep is loose. The higher viscosity is great for mixing with the corn. I didn’t see a need to put it back in the microwave, but if you think it needs more time when you make yours, it shouldn’t be more than five minutes; tops!
I thought it came out great! I was really happy with how creamy it was and how the flavors came together! I ate it pretty quickly and was still craving it when I was done. Like I said, it doesn’t cost a lot to make. Maybe three dollars. It’s defintily easy, you just put it all together in a bowl and put it in the microwave. You stir before you eat and it’s done! And best of all? It’s REALLY good!!
If you have IBS and corn is a problem or you have Divo, obviously this isn’t a good idea for you. This also isn’t Vegan friendly because of the cream cheese (although you could use vegan cream cheese, if you wanted to give it a shot). But, it is Vegetarian friendly and I was able to eat it with no problems!
